People, merchants, used salt to cure meats (Pork and Cod) to last longer which allowed them to go farther on trade routes than usual. Also since salt was so important to trading, it was used as currency in some regions of southern europe, it caused a number of wars. When anything is that important of an item it is worth fighting over. Whoever controls the salt, controls trade routes, and in turn make the money to establish even more control over the industry.
